For those who know me well, know that I love to bake and decorate cupcakes.  It’s actually one of my favourite hobbies.  Whenever there is a special occasion I’m usually called upon to whip up a batch!  However, now that I have a two year old son,  I don’t always have the time to make a batch from scratch, so for these pumpkin spice cupcakes I used a boxed mix, and a quick homemade cinnamon cream cheese icing recipe.

Pumpkin Spice Cupcakes

 

Here’s what you will need:

Cake

1 box of boxed spice flavoured cake mix (I used Betty Crocker Supermoist)

1 1/4 cups of water

1/3 cup of vegetable oil

3 eggs

Icing

8 oz cream cheese

1/4 cup unsalted butter, room temperature

1 tsp vanilla extract

1 1/2 tsp cinnamon (I like to add more)

2-3 cups powdered icing sugar (more or less to adjust the thickness of icing)

* you can also purchase store bought icing, but I prefer the taste of homemade.

 

Here’s how to make it:

1.  Follow mixing/baking directions on the cake mix box

2.  Let the cupcakes cool

3.  Mix cream cheese and butter well

4.  Add vanilla and cinnamon

5.  Add powdered icing sugar until desired stiffness is achieved

6.  Decorate cupcakes!

I have a professional piping bag to decorate cupcakes, but you can easily just use a knife to spread it on, or fill a plastic sandwich bag with icing and cut the tip off to use like a piping bag.

There you have it!  An easy, yummy recipe that will wow your guests!
